The Municipality of Anchorage recently adopted the new Municipal Food Code which mandates that the operator of a foodservice establishment "shall have at least one certified food protection manager for each location." And the State of Alaska recently amended the Alaska Food Service Code (18 AAC 31) to make it mandatory that "each operator of a foodservice establishment must have a certified manager present during each shift if there has been a documented inability to serve food safely.
